Ingredients

  • 4 medium Yukon Gold or russet potatoes
  • 2 tablespoons olive oil or melted butter
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried rosemary or thyme or Italian seasoning
  • Optional: grated Parmesan sour cream, chives, or bacon for topping

Method

  1. Prep the Potatoes:
  2. Wash and dry potatoes. Place each potato between two chopsticks or wooden spoons, then make thin slices (⅛–¼ inch apart) across the top, stopping just before the bottom to keep them intact.
  3. Season:
  4. Mix olive oil or butter with minced garlic, salt, pepper, and herbs. Use a brush or spoon to coat the potatoes, gently getting the mixture between slices.
  5. Air Fry:
  6. Place potatoes in a preheated air fryer at 375°F (190°C). Cook for 25–30 minutes, depending on size, until golden brown and crispy on the edges and fork-tender inside.
  7. Finish & Serve:
  8. Brush with extra butter or oil, sprinkle with Parmesan, and serve with sour cream or your favorite toppings.

Notes

  • Crispier finish: Cook an extra 5 minutes for ultra-crispy edges.
  • Even slicing tip: Use chopsticks to prevent cutting all the way through.
  • Add cheese: In the last 5 minutes of cooking, sprinkle shredded cheese between slices.
  • Storage: Best served fresh, but leftovers can be reheated in the air fryer for 5–6 minutes.
