Prep the Potatoes:
Wash and dry potatoes. Place each potato between two chopsticks or wooden spoons, then make thin slices (⅛–¼ inch apart) across the top, stopping just before the bottom to keep them intact.
Season:
Mix olive oil or butter with minced garlic, salt, pepper, and herbs. Use a brush or spoon to coat the potatoes, gently getting the mixture between slices.
Air Fry:
Place potatoes in a preheated air fryer at 375°F (190°C). Cook for 25–30 minutes, depending on size, until golden brown and crispy on the edges and fork-tender inside.
Finish & Serve:
Brush with extra butter or oil, sprinkle with Parmesan, and serve with sour cream or your favorite toppings.
