Ingredients

  • 1 sheet puff pastry thawed
  • 8 oz Gruyère cheese block or wheel
  • 2 teaspoons fresh rosemary finely chopped
  • 1 clove garlic finely minced
  • 1 tablespoon olive oil
  • 1 egg beaten (for egg wash)
  • Optional: honey for drizzling
  • Optional: crackers or sliced baguette for serving

Method

  1. Preheat Oven
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Prepare the Topping
  4. In a small pan, heat olive oil over medium heat. Add minced garlic and rosemary. Sauté for 1–2 minutes until fragrant, then remove from heat.
  5. Wrap the Cheese
  6. Place the Gruyère in the center of the puff pastry sheet. Spoon the garlic-rosemary mixture on top of the cheese.
  7. Seal the Pastry
  8. Fold the pastry corners up and over the cheese, pinching to seal. Trim excess dough if needed and press to secure. Flip the wrapped cheese so the seam is on the bottom. Brush with egg wash for a golden finish.
  9. Bake Until Golden
  10. Transfer to the prepared baking sheet and bake for 20–25 minutes, or until the pastry is golden brown and puffed.
  11. Serve Warm
  12. Let rest for 5 minutes. Optionally drizzle with honey and serve with crackers or sliced bread.

Notes

  • Cheese Swap: Brie or Camembert also work well in this recipe if Gruyère isn’t available.
  • Pastry Tips: Keep the puff pastry cold for best results; chill the wrapped cheese for 10 minutes before baking if needed.
  • Flavor Boost: Add a thin layer of fig jam or caramelized onions on the cheese before wrapping for a sweet-savory contrast.
  • Serving Suggestion: Ideal as a centerpiece for an appetizer board with grapes, nuts, and cured meats.
