Ingredients
  

  • 4 boneless skinless chicken breasts
  • tbsp Cajun seasoning store-bought or homemade – see below
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and black pepper to taste (optional)
  • Lemon wedges or chopped parsley for garnish
Optional Homemade Cajun Seasoning:
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ¼ tsp cayenne pepper or to taste
  • ½ tsp salt
  • ½ tsp black pepper

Method
 

Prep Chicken:
  1. Pat chicken dry with paper towels.
  2. Season both sides with Cajun seasoning (and a little salt and pepper if needed).
Sear Chicken:
  1. Heat olive oil and butter in a large skillet over medium-high heat.
  2. Add chicken and cook for 5–6 minutes per side, or until the outside is browned and the inside is cooked through (internal temp 165°F / 74°C).
Rest and Serve:
  1. Remove from skillet and let rest for 5 minutes.
  2. Slice and garnish with fresh parsley or lemon wedges.

Notes

  • Adjust the Heat: Cajun seasoning can be spicy! Reduce the cayenne pepper if you're sensitive to heat or making your own blend.
  • Use Thighs Instead: This recipe works great with boneless chicken thighs for an even juicier result.
  • Make It Creamy: Turn this into a creamy Cajun chicken by adding ½ cup of heavy cream and ¼ cup of chicken broth to the skillet after removing the chicken—simmer and stir to create a quick sauce.
