Season the Steaks
Pat steaks dry with paper towels. Rub with olive oil, then season generously with Cajun seasoning, salt, and pepper on both sides.
Make the Glaze
In a small saucepan over medium heat, combine apricot preserves, orange juice, Dijon mustard, red pepper flakes, and a pinch of salt. Stir and let simmer for 3–4 minutes until thickened slightly. Set aside.
Sear the Steaks
Heat a cast-iron skillet over medium-high heat. Add butter and smashed garlic. Once the butter is hot and foaming, add the steaks. Sear for 3–4 minutes per side for medium-rare, adjusting time for desired doneness.
Glaze the Steaks
Brush the apricot orange glaze generously over the steaks during the last minute of cooking. Flip and brush the other side. Let the glaze bubble slightly, forming a sticky coating.
Rest and Serve
Transfer steaks to a plate and rest for 5 minutes. Slice and drizzle with more glaze if desired. Serve hot with sides like mashed potatoes, roasted vegetables, or a crisp salad.
