Ingredients
  

  • 2 ribeye or sirloin steaks about 8 oz each
  • 1 tablespoon olive oil
  • teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 garlic cloves smashed
  • For the Glaze:
  • ¼ cup apricot preserves
  • 2 tablespoons orange juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon red pepper flakes optional, for heat
  • Pinch of salt

Method
 

  1. Season the Steaks
  2. Pat steaks dry with paper towels. Rub with olive oil, then season generously with Cajun seasoning, salt, and pepper on both sides.
  3. Make the Glaze
  4. In a small saucepan over medium heat, combine apricot preserves, orange juice, Dijon mustard, red pepper flakes, and a pinch of salt. Stir and let simmer for 3–4 minutes until thickened slightly. Set aside.
  5. Sear the Steaks
  6. Heat a cast-iron skillet over medium-high heat. Add butter and smashed garlic. Once the butter is hot and foaming, add the steaks. Sear for 3–4 minutes per side for medium-rare, adjusting time for desired doneness.
  7. Glaze the Steaks
  8. Brush the apricot orange glaze generously over the steaks during the last minute of cooking. Flip and brush the other side. Let the glaze bubble slightly, forming a sticky coating.
  9. Rest and Serve
  10. Transfer steaks to a plate and rest for 5 minutes. Slice and drizzle with more glaze if desired. Serve hot with sides like mashed potatoes, roasted vegetables, or a crisp salad.
