Chicago Style Deep Dish Pizza

Ingredients
  

  • For the Dough:
  • 2 1/4 tsp yeast
  • 1 1/4 cups warm water
  • 2 tsp sugar
  • 3 1/4 cups flour
  • 1/2 cup cornmeal
  • 1 tsp salt
  • 1/4 cup butter melted
  • 2 tbsp olive oil
  • For the Filling:
  • 3 cups shredded mozzarella
  • 1 lb Italian sausage cooked
  • 1 cup mushrooms optional
  • 1/2 cup spinach optional
  • For the Sauce:
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1 28 oz can crushed tomatoes
  • 1 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp sugar
  • Salt & pepper
  • Topping:
  • 1/4 cup Parmesan

Method
 

  1. Mix yeast, water, and sugar. Let foam. Combine dry dough ingredients. Add yeast mix, butter, oil. Knead into a dough. Let rise.
  2. Make sauce by cooking garlic in oil, adding tomatoes and seasoning. Simmer.
  3. Preheat oven to 425°F. Oil a deep-dish pan. Press dough into it.
  4. Add mozzarella, then sausage and toppings. Spread sauce over it. Sprinkle Parmesan.
  5. Bake 25–30 minutes. Let cool before slicing.

Notes

  • Use part-skim mozzarella for less grease.
  • Pre-cook vegetables to avoid extra moisture.
  • For extra crisp crust, bake on lower oven rack.
