  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro or parsley
  • Optional: 1–2 tablespoons breadcrumbs for binding
  • For the Avocado Corn Salsa:
  • 1 ripe avocado diced
  • ½ cup fresh or grilled corn from 1 ear or canned, drained
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste
  • Optional: chopped jalapeño or cilantro for extra flavor
  • To Assemble:
  • 4 burger buns
  • Lettuce or arugula
  • Optional: mayonnaise chipotle sauce, or cheese slices

Method
 

  1. Make the Chicken Patties:
  2. In a bowl, combine ground chicken, garlic, olive oil, paprika, onion powder, salt, pepper, and herbs. Mix gently until combined. Shape into 4 equal patties.
  3. Cook the Patties:
  4. Heat a grill or skillet over medium-high heat. Cook burgers 4–5 minutes per side, or until internal temp reaches 165°F and outside is nicely browned.
  5. Make the Salsa:
  6. In a bowl, gently combine avocado, corn, tomatoes, onion, lime juice, and seasoning. Stir carefully to avoid mashing the avocado.
  7. Toast the Buns (Optional):
  8. Lightly toast buns on the grill or skillet until golden.
  9. Assemble the Burgers:
  10. Layer each bun with lettuce or greens, a chicken patty, and a generous scoop of avocado corn salsa. Add any additional sauces or toppings you like.
