Ingredients
  

  • 1.5 lbs boneless skinless chicken breast or thighs cut into 1.5-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon soy sauce
  • 3 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Wooden or metal skewers soak wooden ones in water for 30 min

Method
 

  1. Make the Marinade
  2. In a large bowl, whisk together olive oil, lemon juice, soy sauce, garlic, paprika, oregano, cumin, salt, and pepper.
  3. Marinate the Chicken
  4. Add the cubed chicken to the marinade and toss to coat well. Cover and marinate for at least 30 minutes (up to 4 hours) in the refrigerator.
  5. Preheat the Oven
  6. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top, or use a broiler pan.
  7. Assemble the Skewers
  8. Thread the marinated chicken pieces onto skewers, leaving a little space between each for even cooking.
  9. Bake the Skewers
  10. Arrange the skewers on the wire rack. Bake for 20–25 minutes, turning halfway through, until chicken is golden brown and cooked through (internal temp: 165°F/74°C).
  11. Optional Broil Finish
  12. For a crispier exterior, broil the skewers on high for 2–3 minutes at the end.
  13. Serve
  14. Serve hot with rice, salad, pita, or your favorite dipping sauces.
