Make the Marinade:
In a bowl or zip-top bag, mix olive oil, lime juice, lime zest, garlic, cumin, chili powder, salt, pepper, and chopped cilantro.
Marinate the Chicken:
Add chicken to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (up to 8 hours for deeper flavor).
Grill or Cook the Chicken:
Grill: Preheat grill to medium-high heat. Grill chicken 5–6 minutes per side until nicely charred and cooked through.
Stovetop: Heat a large skillet over medium heat with a splash of oil. Sear chicken 6–7 minutes per side until golden and fully cooked.
Oven: Bake at 400°F (200°C) for 22–25 minutes, or until internal temperature reaches 165°F (74°C).
Rest and Slice:
Let chicken rest for 5 minutes before slicing.
Serve:
Garnish with fresh cilantro and lime wedges. Serve with rice, tortillas, or salad.
