Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • Salt and black pepper to taste
  • ½ cup Dijon mustard
  • ¼ cup honey
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 teaspoon dried thyme or rosemary
  • Fresh parsley for garnish (optional)

Method

  1. Preheat Oven:
  2. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  3. Make the Sauce:
  4. In a small bowl, whisk together Dijon mustard, honey, olive oil, garlic, and herbs.
  5. Assemble:
  6. Season chicken with salt and pepper. Place in the baking dish and pour the honey Dijon sauce over the top, spreading evenly to coat each piece.
  7. Bake:
  8. Bake uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Baste once halfway through for extra flavor.
  9. Serve:
  10. Let rest 5 minutes. Garnish with chopped parsley and spoon extra sauce over top. Serve with rice, potatoes, or roasted vegetables.

Notes

  • Thighs or drumsticks: Use bone-in, skin-on chicken—just increase baking time to 40–45 minutes.
  • Add-ons: Toss in sliced onions or carrots to bake with the chicken for a one-pan meal.
  • Storage: Leftovers can be refrigerated for up to 4 days. Great for meal prep!
  • Make it creamy: Stir in 2 tablespoons of cream or Greek yogurt to the sauce for a richer finish.
