Marinate the Chicken:
In a large bowl, combine olive oil, garlic, Italian seasoning, red pepper flakes, parmesan, and lemon juice. Add chicken pieces, season with salt and pepper, and toss to coat. Let marinate for at least 15 minutes (or up to 2 hours in the fridge).
Assemble Skewers:
Thread marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
Cook the Skewers:
Grill Method: Preheat grill to medium-high heat. Grill skewers 5–7 minutes per side, or until nicely charred and cooked through.
Oven Method: Preheat oven to 425°F (220°C). Place skewers on a baking sheet lined with foil or parchment. Bake for 15–18 minutes, flipping once halfway through, until golden and cooked through.
Garnish and Serve:
Sprinkle with extra parmesan and chopped parsley before serving. Serve hot with dipping sauce, rice, salad, or flatbread.
