Ingredients
  

  • lbs sirloin steak cut into 1-inch cubes
  • 1 lb baby potatoes halved or quartered
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter melted
  • 4 garlic cloves minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon fresh thyme or rosemary optional
  • Salt and black pepper to taste
  • Optional: chopped parsley for garnish

Method
 

  1. Preheat and Prep:
  2. Preheat grill to medium-high or oven to 425°F (220°C). Cut 4 large sheets of heavy-duty foil (about 12x12 inches each).
  3. Season the Ingredients:
  4. In a large bowl, toss steak cubes and potatoes with olive oil, garlic, Italian seasoning, salt, and pepper.
  5. Assemble Foil Packs:
  6. Divide steak and potatoes evenly among the foil sheets. Drizzle each with melted butter and sprinkle with thyme or rosemary.
  7. Seal and Cook:
  8. Fold up each foil packet tightly to seal.
  9. Grill: Place packets on the grill and cook for 10–12 minutes per side.
  10. Oven: Bake directly on a baking sheet for 20–25 minutes, or until potatoes are tender and steak is cooked to desired doneness.
  11. Serve:
  12. Carefully open foil packs (watch the steam!) and garnish with chopped parsley if desired. Serve hot.

Notes

  • Customize: Add sliced mushrooms, bell peppers, or onions for more flavor and texture.
  • Make it cheesy: Open foil packs for the last 5 minutes and top with shredded cheese.
  • Steak doneness: For medium steak, cook about 10–12 minutes per side on grill. Cut into a piece to check doneness if unsure.
  • Campfire-friendly: These are great cooked over hot coals for about 20 minutes, flipping once.
