Ingredients
  

  • 4 boneless skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice or vinegar
  • 3 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Optional: ½ teaspoon crushed red pepper flakes for heat

Method
 

  1. Prepare the Marinade:
  2. In a bowl or zip-top bag, whisk together olive oil, lemon juice, garlic, smoked paprika, oregano, onion powder, salt, and pepper.
  3. Marinate the Chicken:
  4. Add chicken to the marinade and toss to coat well. Cover and refrigerate for at least 30 minutes or up to 8 hours for deeper flavor.
  5. Preheat the Grill:
  6. Heat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
  7. Grill the Chicken:
  8. Remove chicken from marinade and grill for 5–7 minutes per side, depending on thickness, or until internal temperature reaches 165°F (74°C) and juices run clear. Flip only once to get great grill marks.
  9. Rest and Serve:
  10. Let chicken rest for 5 minutes before slicing. Serve with your favorite sides, over salads, or in wraps.

Notes

  • No grill? Use a grill pan or cast iron skillet on the stovetop.
