Grilled Citrus Chicken with Glaze

Ingredients
  

  • For the Marinade:
  • 4 boneless skinless chicken breasts (or thighs)
  • Juice and zest of 1 orange
  • Juice and zest of 1 lime
  • 2 tablespoons olive oil
  • 2 garlic cloves minced
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme or Italian seasoning
  • For the Citrus Glaze:
  • ¼ cup orange juice
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch + 1 tablespoon water slurry
  • Optional: pinch of chili flakes for heat

Method
 

  1. Marinate the Chicken:
  2. In a bowl or zip-top bag, combine all marinade ingredients. Add chicken, toss to coat, and refrigerate for 30 minutes to 2 hours.
  3. Make the Glaze:
  4. In a small saucepan, combine orange juice, honey, and soy sauce. Bring to a simmer over medium heat. Stir in cornstarch slurry and cook until thickened, about 2–3 minutes. Remove from heat and set aside.
  5. Grill the Chicken:
  6. Preheat grill (or grill pan) to medium-high heat. Lightly oil the grates. Grill chicken 6–8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  7. Glaze and Serve:
  8. During the last few minutes of grilling, brush the chicken with the citrus glaze. Remove from grill, rest for 5 minutes, then brush with more glaze before serving.

Notes

  • Don’t skip zest: Citrus zest adds a punch of aromatic flavor.
  • Make it spicy: Add chili flakes or a dash of hot sauce to the glaze.
  • No grill? Bake at 400°F (200°C) for 20–25 minutes or use a stovetop grill pan.
  • Storage: Refrigerate leftovers for up to 3 days. Reheat gently and brush with extra glaze.
  • Pair it with: Coconut rice, grilled vegetables, or a fresh cucumber salad.
