Ingredients
  

  • 1 lb ground beef
  • 1 tablespoon oil vegetable, canola, or coconut oil
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 tablespoon fresh ginger grated (or 1 tsp ground ginger)
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder adjust to taste
  • Salt and pepper to taste
  • 1 14.5 oz can diced tomatoes
  • ¼ cup water or beef broth optional for thinning
  • ½ cup frozen peas optional
  • 2 tablespoons chopped cilantro for garnish
  • Cooked rice or naan for serving

Method
 

  1. Cook the Beef:
  2. In a large skillet over medium heat, add oil and ground beef. Cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Sauté Aromatics:
  4. Add diced onion and cook for 3–4 minutes until soft. Stir in garlic and ginger, and cook for another 1–2 minutes until fragrant.
  5. Add Spices:
  6. Sprinkle in curry powder, cumin, coriander, turmeric, and chili powder. Stir to coat the meat and toast the spices for 1 minute.
  7. Add Tomatoes:
  8. Pour in the diced tomatoes (with juices) and water or broth if the mixture seems dry. Stir well and bring to a simmer.
  9. Simmer and Finish:
  10. Simmer for 10–15 minutes, uncovered, until the sauce thickens. Stir in frozen peas in the last few minutes if using. Adjust seasoning with salt and pepper.
  11. Serve:
  12. Garnish with chopped cilantro. Serve hot over rice or with warm naan bread.

Notes

  • Make it creamy: Stir in ¼ cup coconut milk or plain yogurt at the end for a creamy finish.
  • Low-carb option: Serve with cauliflower rice instead of regular rice.
  • Storage: Keeps well in the fridge for 3–4 days. Freezes beautifully for meal prep.
