Method
- Heat oil in a large pot. Sauté onion, celery, and carrots for 5–7 minutes. Add garlic and cook 1 more minute.
- Add ham bone or diced ham, seasonings, bay leaf, beans, and broth.
- Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes.
- Remove ham bone, shred meat, return to pot. Adjust salt.
- Serve hot, garnished with parsley.
Notes
- Use dried beans for a traditional version, just extend cooking time.
- Freezes well for up to 3 months.
