Ingredients
  

  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp black pepper
  • 6 cups chicken broth
  • 1 ham bone or 2 cups diced ham
  • 2 cans 15 oz white beans, drained
  • 1 bay leaf
  • Salt to taste
  • Fresh parsley for garnish

Method
 

  1. Heat oil in a large pot. Sauté onion, celery, and carrots for 5–7 minutes. Add garlic and cook 1 more minute.
  2. Add ham bone or diced ham, seasonings, bay leaf, beans, and broth.
  3. Bring to a boil, then reduce heat and simmer uncovered for 45–60 minutes.
  4. Remove ham bone, shred meat, return to pot. Adjust salt.
  5. Serve hot, garnished with parsley.

Notes

  • Use dried beans for a traditional version, just extend cooking time.
  • Freezes well for up to 3 months.
  • Add greens like kale for a nutritious twist.
  • Great with crusty bread or cornbread.
