- Set Instant Pot to sauté. Add olive oil and onion; cook 3–5 minutes. Add garlic and cook 30 seconds.
- Add chicken, beans, chilies, spices, and broth. Stir to combine.
- Pressure cook on High for 15 minutes. Let release naturally for 10 minutes, then quick release.
- Remove chicken, shred, and return to the pot.
- Stir in cream cheese and sour cream until melted. Add corn if using.
- Garnish with lime juice and your favorite toppings.
Notes
- For spicier chili, add hot sauce or jalapeños.
- Substitute Greek yogurt for sour cream for a protein boost.
- To thicken chili, mash a few beans before adding the dairy.
