Ingredients
  

  • 1 lb boneless skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3 garlic cloves minced
  • 1 cup sun-dried tomatoes packed in oil, drained and sliced
  • 1 9 oz package refrigerated cheese tortellini
  • cups chicken broth
  • ½ cup heavy cream
  • ½ teaspoon dried Italian seasoning
  • 2 cups baby spinach
  • cup grated Parmesan cheese
  • Optional: red pepper flakes for heat
  • Fresh basil or parsley chopped (for garnish)

Method
 

  1. Cook the Chicken
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper. Add to the pan and sauté for 5–6 minutes, or until cooked through and golden. Remove and set aside.
  3. Sauté Garlic and Tomatoes
  4. In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1–2 minutes until fragrant.
  5. Add Tortellini and Liquids
  6. Pour in the chicken broth and heavy cream. Stir in the Italian seasoning and bring to a simmer.
  7. Simmer with Tortellini
  8. Add the tortellini to the skillet. Cook for 4–5 minutes (or according to package instructions), stirring occasionally, until tender and the sauce starts to thicken.
  9. Combine Chicken and Spinach
  10. Return the cooked chicken to the skillet. Stir in spinach and Parmesan cheese. Simmer 1–2 more minutes, just until the spinach wilts and the sauce is creamy.
  11. Serve
  12. Taste and adjust seasoning if needed. Sprinkle with red pepper flakes and garnish with chopped basil or parsley. Serve warm.
