Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a loaf pan or line with parchment.
Mix the Meatloaf:
In a large bowl, combine ground beef, crushed tortilla chips, cheese, salsa, green chiles, egg, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix until just combined.
Shape and Bake:
Press mixture into the prepared loaf pan. Spread a few spoonfuls of salsa on top.
Bake:
Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
Serve:
Slice and top with optional sour cream, fresh cilantro, or jalapeño slices. Great with Mexican rice, beans, or a fresh salad.
