Mexican Meatloaf

Ingredients
  

  • 1 ½ lbs ground beef
  • 1 cup crushed tortilla chips or breadcrumbs
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup salsa plus extra for topping
  • 1 4 oz can diced green chiles
  • 1 egg
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Optional garnish: sour cream cilantro, jalapeño slices

Method
 

  1. Preheat Oven:
  2. Preheat your oven to 375°F (190°C). Grease a loaf pan or line with parchment.
  3. Mix the Meatloaf:
  4. In a large bowl, combine ground beef, crushed tortilla chips, cheese, salsa, green chiles, egg, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  5. Shape and Bake:
  6. Press mixture into the prepared loaf pan. Spread a few spoonfuls of salsa on top.
  7. Bake:
  8. Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
  9. Serve:
  10. Slice and top with optional sour cream, fresh cilantro, or jalapeño slices. Great with Mexican rice, beans, or a fresh salad.

Notes

  • For extra heat, stir in chopped jalapeños or use spicy salsa.
  • Swap ground beef for ground turkey or a beef/pork mix.
  • Leftovers make excellent taco or burrito filling.
  • This meatloaf freezes well — bake, cool, and wrap tightly.
