One Pot Chicken Fajita Pasta

Ingredients
  

  • 1 lb boneless skinless chicken breasts, sliced into strips
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning store-bought or homemade
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow onion sliced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup milk or half-and-half
  • 8 oz penne or rotini pasta uncooked
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream optional, for extra creaminess
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Method
 

Cook the Chicken:
  1. In a large pot or deep skillet, heat 1 tablespoon olive oil over medium-high heat. Add chicken, season with half the fajita seasoning, and cook until browned and cooked through (about 5–7 minutes). Remove from pan and set aside.
Sauté Veggies:
  1. In the same pot, add another tablespoon of olive oil. Sauté bell peppers, onion, and garlic until softened, about 5 minutes. Season with remaining fajita seasoning.
Simmer Pasta:
  1. Add chicken broth, milk, and uncooked pasta to the pot. Stir well and bring to a boil. Reduce heat, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
Stir in Chicken & Cheese:
  1. Return cooked chicken to the pot. Stir in shredded cheese and sour cream (if using). Cook for another 2–3 minutes until everything is well combined and creamy.
Garnish & Serve:
  1. Top with chopped cilantro or parsley and serve hot.

Notes

  • Use rotisserie chicken to save time.
  • Spice it up with jalapeños or a dash of hot sauce.
  • For a lighter version, skip the sour cream and use low-fat cheese.
