Marinate the Chicken:
In a large bowl or zip-top bag, whisk together marinade ingredients. Add chicken and toss to coat. Cover and refrigerate for at least 2 hours or overnight for best flavor.
Cook the Chicken:
Preheat oven to 425°F (220°C). Arrange chicken on a baking sheet lined with foil or parchment. Roast for 35–40 minutes, or until the internal temperature reaches 165°F and skin is crispy and golden. For extra crispiness, broil for the last 2–3 minutes.
Make the Green Sauce (Aji Verde):
While chicken cooks, add all sauce ingredients to a blender or food processor. Blend until smooth and creamy. Taste and adjust salt or lime juice as needed.
Serve:
Plate chicken with a generous drizzle of green sauce. Serve with roasted potatoes, rice, or a simple salad.
