Marinate the Cod:
In a small bowl, whisk together olive oil, lime juice, lime zest, chili powder, paprika, garlic powder, cumin, salt, and pepper.
Place the cod fillets in a shallow dish or resealable bag and pour the marinade over them. Let it sit for at least 15 minutes (or up to 30 minutes in the fridge).
Preheat Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Roast the Cod:
Place the marinated cod fillets on the prepared baking sheet. Roast in the oven for 12–15 minutes, or until the fish is opaque and flakes easily with a fork. (Internal temp should reach 145°F/63°C.)
Serve:
Garnish with fresh cilantro and lime wedges. Serve hot with rice, roasted veggies, or a fresh salad.
