Ingredients
  

  • 4 cod fillets about 6 oz each
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice fresh
  • 1 teaspoon lime zest
  • 2 teaspoons chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh chopped cilantro and lime wedges for garnish

Method
 

  1. Marinate the Cod:
  2. In a small bowl, whisk together olive oil, lime juice, lime zest, chili powder, paprika, garlic powder, cumin, salt, and pepper.
  3. Place the cod fillets in a shallow dish or resealable bag and pour the marinade over them. Let it sit for at least 15 minutes (or up to 30 minutes in the fridge).
  4. Preheat Oven:
  5. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  6. Roast the Cod:
  7. Place the marinated cod fillets on the prepared baking sheet. Roast in the oven for 12–15 minutes, or until the fish is opaque and flakes easily with a fork. (Internal temp should reach 145°F/63°C.)
  8. Serve:
  9. Garnish with fresh cilantro and lime wedges. Serve hot with rice, roasted veggies, or a fresh salad.

Notes

  • No cod? You can substitute haddock, tilapia, or halibut.
  • Spicy twist: Add a pinch of cayenne for extra heat.
