Ingredients
  

  • For the Beef:
  • 1 lb flank steak or sirloin thinly sliced against the grain
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon oil vegetable or sesame, for stir-frying
  • For the Sesame Ginger Sauce:
  • ¼ cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic minced
  • 1 teaspoon chili garlic sauce optional
  • 1 tablespoon cornstarch + 2 tablespoons water slurry
  • For Garnish & Serving:
  • 1 tablespoon toasted sesame seeds
  • 2 green onions sliced
  • Steamed rice or noodles for serving

Method
 

  1. Prep the Beef:
  2. In a bowl, toss sliced beef with 2 tablespoons cornstarch and 1 tablespoon soy sauce. Let sit while you prepare the sauce.
  3. Make the Sauce:
  4. In a small bowl, whisk together soy sauce, honey, vinegar, sesame oil, ginger, garlic, and chili garlic sauce. Set aside. Mix cornstarch and water to form a slurry.
  5. Sear the Beef:
  6. Heat oil in a large skillet or wok over medium-high heat. Stir-fry beef in batches for 1–2 minutes per side until browned and just cooked. Remove and set aside.
  7. Cook the Sauce:
  8. In the same pan, add the sauce mixture. Bring to a simmer, then stir in the cornstarch slurry. Simmer for 1–2 minutes until thickened.
  9. Combine:
  10. Return the beef to the skillet and toss to coat in the sauce. Cook 1 more minute until everything is hot and glossy.
  11. Serve:
  12. Spoon over rice or noodles. Top with sesame seeds and green onions.

Notes

  • Beef tip: Freeze beef for 15 minutes before slicing for cleaner cuts.
  • Add veggies: Stir-fry bell peppers, broccoli, or snow peas for extra crunch.
  • Storage: Keeps well in the fridge for 3 days. Reheat in a skillet for best texture.
