Ingredients
  

  • 1 tablespoon olive oil
  • ½ pound shrimp peeled, deveined, and chopped
  • 1 teaspoon Cajun seasoning
  • 1 small onion finely diced
  • ½ red bell pepper diced
  • 2 garlic cloves minced
  • 8 oz cream cheese softened
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • 1 cup shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese
  • 2 green onions sliced
  • Hot sauce to taste
  • Salt and black pepper to taste
  • Optional: chopped parsley or green onions for garnish

Method
 

  1. Cook the Shrimp
  2. Heat olive oil in a skillet over medium heat. Add the chopped shrimp and season with Cajun seasoning. Cook for 2–3 minutes until pink and just cooked through. Remove from skillet and set aside.
  3. Sauté the Aromatics
  4. In the same skillet, add onion and red bell pepper. Sauté for 3–4 minutes until softened. Stir in the garlic and cook for 30 seconds.
  5. Combine the Base
  6. Reduce heat to low. Add cream cheese, sour cream, and mayonnaise to the skillet. Stir until smooth and well combined.
  7. Add Cheese and Shrimp
  8. Mix in the Monterey Jack, cheddar, cooked shrimp, and green onions. Stir until the cheese melts and the dip is creamy. Add hot sauce, salt, and pepper to taste.
  9. Bake or Broil (Optional)
  10. For a bubbly, golden top, transfer the dip to an oven-safe dish and broil for 2–3 minutes until lightly browned.
  11. Serve
  12. Garnish with parsley or extra green onions if desired. Serve hot with toasted baguette slices, crackers, or tortilla chips.
