Tacos Dorados

Also known as “golden tacos,” these crispy, pan-fried or deep-fried tacos are filled with seasoned meat or potatoes, rolled or folded, and cooked to a crunchy, golden perfection. Serve with shredded lettuce, crema, salsa, and cheese for a classic Mexican comfort dish.

Ingredients
  

  • For the Filling:
  • 1 lb ground beef shredded chicken, or mashed potatoes
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder or paprika
  • Salt and pepper to taste
  • For the Tacos:
  • 8 corn tortillas
  • Toothpicks if rolling
  • Vegetable oil for frying
  • Optional Toppings:
  • Shredded lettuce
  • Crumbled queso fresco or shredded cheddar
  • Mexican crema or sour cream
  • Salsa or hot sauce
  • Sliced avocado or guacamole
  • Chopped cilantro

Method
 

  1. Prepare the Filling:
  2. In a skillet over medium heat, cook onion until softened (about 3 minutes). Add garlic and cook 1 minute more. Stir in beef or chicken and season with cumin, chili powder, salt, and pepper. Cook until heated through. Set aside.
  3. Soften the Tortillas:
  4. Warm tortillas slightly (in a microwave or skillet) to make them pliable and prevent tearing.
  5. Assemble the Tacos:
  6. Spoon 2–3 tablespoons of filling onto each tortilla. Fold in half or roll tightly and secure with a toothpick if necessary.
  7. Fry Until Golden:
  8. In a large skillet, heat ½ inch of oil over medium heat. Fry tacos in batches until golden and crispy on both sides, about 2–3 minutes per side. Drain on paper towels.
  9. Serve:
  10. Top with lettuce, crema, cheese, salsa, and your favorite garnishes. Serve hot.

Notes

  • Use mashed seasoned potatoes or beans for a vegetarian version.
  • You can bake these at 400°F for 15–20 minutes, brushing lightly with oil, for a lighter option.
  • Great for meal prep — keep filling and tortillas separate until ready to cook.
  • Leftover tacos can be reheated in the oven to maintain crispiness.
